Sweet and Spicy Chicken
  • 1 lb. boneless skinless chicken breasts, cut into 1/2" cubes
  • 3 tablespoons of taco seasoning
  • 1 tsp. veg. oil
  • 1 jar (11 oz) chunky salsa
  • 1/2 c. peach preserves
  • Hot cooked rice
  1. Place the chicken in a large resealable plastic bag; add taco seasoning
  2. and toss to coat. In a skillet brown chicken in oil. Combine salsa
  3. and preserves; stir into skillet. Bring to a boil. Reduce heat; cover
  4. and simmer for 2 to 3 minutes or until meat juices run clear. Serve
  5. over rice.
