Sweet and sour spareribs

- 2 lbs spareribs – have butcher cut into 1 inch pieces
- ½ c cornstarch
- ¼ c Canola oil
- 1 garlic clove, smashed
- 1 onion, diced and carmelized
- 1 can pineapple chunks, drained
- sauce
- ¾ c sugar
- ½ c apple cider vinegar
- ¼ c molasses
- ½ c soy sauce
- 1 c pineapple juice
DIRECTIONS
- Parboil spareribs until meat shrinks from the bone and drain well
- Coat all pieces with cornstarch very well
- Cook garlic in oil until just browned, then remove
- Brown sparerib pieces over medium heat
- Remove sparerib pieces and pour off excess oil
- Combine all sauce ingredients in pan and simmer for about 5 minutes or until sugar is dissolved
- Add ribs back to sauce, tossing to cover, and simmer for 15 to 20 minutes
- Add caramelized onions and pineapple, cooking for another 5 minutes
