Swiss Corn Bake

INGREDIENTS
  • Servings: 5-6 servings
  • 3 c. fresh corn, cut from cob
  • 1 (5 1/3 oz.) can evaporated milk (2/3.c)
  • 1 egg, beaten
  • 2 Tb. chopped onion
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. shredded Swiss cheese
  • 1/2 c. cracker crumbs
  • 1 Tb. melted butter
DIRECTIONS
  1. Cook corn in boiling salted water 2-3 min. Drain and combine with milk, egg, onion, salt, pepper and Swiss cheese. Place in greased 10X6X1 1/2" casserole.
  2. Toss cracker crumbs with butter. Sprinkle over corn mixture. Bake in 350ยบ oven for 30-35 min. Let set a few min. before serving.
