• 4 or 5 medium russet potatoes
  • 1/4 cup vegetable oil
  • 1 package (1 1/4 ounces) taco seasoning mix
  • 3 tablespoons cornmeal
  1. Heat the oven to 450 degrees.
  2. Pierce potatoes with a fork and place in microwave. Microwave for 6 minutes or until barely tender. Cut potatoes in large cubes and place in a large mixing bowl; toss with vegetable oil. Combine taco seasoning and cornmeal in a large plastic sealable bag. Place potatoes in the bag and shake to coat. Place on an ungreased baking sheet. Bake 8 minutes or until golden brown.
