TOMATO AND BASIL SALAD

INGREDIENTS
  • Servings: 8-10
  • 3 large tomatoes sliced
  • 8 ounces mozzarella, sliced
  • 1/4 cup olive oil
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 cup minced fresh basil
DIRECTIONS
  1. On a large serving platter, alternate tomatoes and mozzarella slices in a circle.
  2. In a jar with a tight-fitting lid, combine the oil, salt and pepper; shake well.
  3. Drizzle over tomatoes and mozzarella. Sprinkle with basil.
RECIPE BACKSTORY
Went to a banquet at an Italian hall and was served a salad basically the same as this. The only difference was the tomatoes were slightly warmed. I haven't been able to duplicate the warmed tomatoes as only the tomato slices were warm.
