TRI-COLOR COOKIES

INGREDIENTS
  • 4 eggs
  • 2 sticks of butter
  • 3 tsp almond extract
  • 1 cup sugar
  • 1 cup flour
  • ½ tsp of baking powder
  • Raspberry Preserves
  • 2 cups semi-sweet chocolate morsels
  • Food coloring
DIRECTIONS
  1. Pre-heat oven to 350 degrees.
  2. Mix eggs, butter, almond extract, sugar, flour, and baking powder together in a large bowl.
  3. Separate mixture evenly between 3 bowls. Add the appropriate food coloring – red in one yellow in the second and green in the third- to each bowl and mix until batter is desired shade
  4. Pour each bowl into separate very well greased 9x9 pans and bake for 10-12 minutes or until toothpick comes out clean.
  5. After allowing cakes to cool lay out waxed paper (on a cutting board or some other portable stiff surface) put green cake down on wax paper. Smooth a very thin layer of raspberry preserves on top of the green layer. On top of that place the yellow cake layer and again smooth a very thin layer of the raspberry preserves topping it with the red cake layer
  6. Now take the chocolate morsels and add a tablespoon of butter and put in the microwave for 2 minutes. Take out and just keep stirring until smooth (will look like they didn’t melt at all when you first remove from microwave). Put very very very thin layer of chocolate on top of red layer and on sides.
  7. Put in refrigerator for at least one hour. When chocolate completely hardened, cut into cookies.
