TURNIP CASSEROLE
INGREDIENTS
  • Servings: 8
  • 6 cups turnip, cubed
  • 2 Tbsp. butter
  • 2 eggs, beaten
  • 3 Tbsp. flour
  • 1 Tbsp. brown sugar
  • 1 tsp. baking powder
  • dash pepper
  • 1?2 cup fine crumbs
  • 2 Tbsp. melted butter
DIRECTIONS
  1. Cook turnip until tender.
  2. Drain and mash.
  3. Add butter and egg.
  4. Beat well. (This much can be done a day ahead.) Combine flour, brown sugar, baking powder, and pepper.
  5. Stir.
  6. Butter casserole dish (2 L) and put in turnip mixture.
  7. Combine crumbs and butter.
  8. Sprinkle on top.
  9. Bake at 375°F (190°C) for 25 minutes or until light brown on top.
