Tabouleh (Cracked Wheat/Cucumber Salad)

  • 1 1/2 cups bulgar wheat (cracked wheat)
  • 1 1/2 cups seeded, chopped tomatoes
  • 1 cup seeded, chopped cucumber
  • 3/4 cup chopped, fresh parsley (a bunch,stems removed)
  • 1/4 cup sliced green onions
  • 1 tsp. grated lemon peel (optional)
  • 1/2 cup lemon juice
  • 1/4 cup extra virgin olive oil
DIRECTIONS
  1. Place bulgar wheat in large bowl and add 1 1/2 cups boiling water.
  2. Cover and let stand 30-45 minutes until water is absorbed.
  3. Add remaining ingredients, salt & pepper to taste, toss to combine.
  4. Cover and chill at least 1 hour before serving.
