Tame Western eggs.
  • 6 eggs
  • 1/2 yellow or orange pepper
  • 1/2 onion
  • 1 small tomato
  • 1 & 1/2 cups shredded Monterey Jack & Cheddar Cheese
  • 2 slices Ham, pulled into pieces. {deli ham is fine}
  • Pepper
  1. Beat eggs in a large bowl. Chop pepper, onion & tomato together. Sprinkle ham into the mixture. Pour slowly into beaten eggs. Beat slowly so the it doesn't become watery. Pour into small frying pan {as if you are making an omelet} As one side cooks, sprinkle cheese in. Just as the one side is cooked, begin to scramble until evenly mixed. Sprinkle in some pepper. Serve w/ biscuits and grits {or homefries}, Enjoy!
