Tara's Slow Cooker Vegan Chili

  • 1/2 medium yellow onion, chopped
  • 2 bay leaves
  • 1 tsp. dried oregano
  • 1 Tbsp. salt
  • 2 stalks celery, chopped
  • 2 green bell peppers, chopped
  • 2 jalapeƱo peppers, chopped
  • 5 cloves garlic, chopped
  • 2 (12 oz) packages vegetarian burger crumbles
  • 3 cans whole peeled tomatoes, crushed
  • 1/4 cup chili powder
  • 1 Tbsp. black pepper
  • 1 (15 oz) can kidney beans, drained
  • 1 (15 oz) can garbanzo beans, drained
  • 1 (15 oz) can black beans, drained
  • 1 (15 oz) can whole kernel corn, drained
DIRECTIONS
  1. Put all ingredients into a slow cooker
  2. Mix well
  3. Cook on High for 6 hours or Low for 10 hours

This won first place in our surgery department annual chili cook off. I don't think a single one of them is vegan. This chili makes an excellent chili pie.
