Tasty Pumpkin Muffins
  • A little more than 2 Cups of Flour.
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1/2 tsp salt
  • 1/3 cup oil
  • 3/4 cup milk
  • I egg {beaten}
  • Canned Pumpkin {I normally get the large can, and then use a little more than half. The extra can be used for other treats But you can also use get the small can and use the whole thing. }
  • Pumpkin pie spice
  • White and Brown sugar mixed {to use as topping}
  1. Mix flour, sugar, salt, and baking powder together. In a separate bowl, mix milk, oil,egg, and pumpkin. Fold into the flour, etc.
  2. Add Pumpkin Pie spice to taste {I use about 3 teaspoons}.
  3. Mix until well blended. {it will be a little sticky and lumpy}.
  4. Scoop into muffin pans.
  5. Sprinkle sugar mixture on the top of each muffin. Bake for about 20 minutes, or until toothpick comes out clean. Enjoy!
