Tater Tot Casserole Supreme
INGREDIENTS

  • Tater Tots (or McDonalds style frozen hashbrowns)
  • 1.5 lbs Ground Beef
  • 3/4 c. Onion (I used sweet)
  • 1/3 c. Red Bell Pepper (Any color would work)
  • 1 can Cream of _______ Soup (I used asparagus)
  • 1 c. Sour Cream
  • 1 c. Milk
  • 3 c. Cheddar (Shredded)
  • 2 Tblspn Powdered Parmesan
  • 1/2 tsp Garlic Salt
  • 1 tsp Black Pepper
  • 1 tsp Onion Powder
  • French Fried Onions
DIRECTIONS
  1. Preheat Oven to 400 degrees.
  2. Fill bottom of pan with tater tots or hashbrowns and bake for 25 minutes.
  3. While hashbrowns are baking, fry hamburger with onions and bell pepper and add garlic salt, black pepper, onion powder and parmesan - set aside.
  4. In a medium bowl mix cream soup, sour cream and milk - set aside.
  5. When the hashbrowns are done baking, take out of oven and spread meat mixture evenly over the top. Sprinkle with 1 cup of your shredded cheddar cheese. Ladle sauce over the top to cover meat and potatoes.
  6. Cover with tinfoil and bake at 400 degrees for 30 minutes.
  7. Sprinkle with remaining cheese and put back in the oven until melted. Remove from the oven and top with french fried onions.
  8. VOILA! Be very careful, this comes out extremely hot. Goes well with green beans and garlic bread. Or have for breakfast and substitute beef for sausage!
RECIPE BACKSTORY
I had never made tater tot casserole before, but a friend of mine told me about it and I decided to create my own version. I served it to my husband, father-in-law and toddler son. They all loved it and when I can find something with red meat that my son will eat, I'm thrilled! So, since we all liked it I thought I would share! :)
