Tequila Lime Chicken
INGREDIENTS
  • 1/4 c. vegetable oil
  • 3 T. fresh lime juice
  • 2 T. fresh orange juice
  • 3 T. tequila
  • 2 T. triple sec
  • 1 large jalapeno, seeded and minced
  • 1 1/2 t grated lime zest
  • 1 T. brown sugar
  • 1/2 t. coarse salt
  • Pinch of pepper
DIRECTIONS
  1. Mix all ingredients in a small bowl. Let stand 15 minutes (can be made the day before) and refrigerate. Marinate poultry 1 - 3 hours. Place on grill.
  2. Note: Recipe says that the reserved marinade can be brought to a boil, and boiled for 1 minute, to serve as a glaze over the meat. I think it is safer to make a second batch of the marinade just for the glaze.
