Tequila Lime Chicken

INGREDIENTS
- 1/4 c. vegetable oil
- 3 T. fresh lime juice
- 2 T. fresh orange juice
- 3 T. tequila
- 2 T. triple sec
- 1 large jalapeno, seeded and minced
- 1 1/2 t grated lime zest
- 1 T. brown sugar
- 1/2 t. coarse salt
- Pinch of pepper
DIRECTIONS
- Mix all ingredients in a small bowl. Let stand 15 minutes (can be made the day before) and refrigerate. Marinate poultry 1 - 3 hours. Place on grill.
- Note: Recipe says that the reserved marinade can be brought to a boil, and boiled for 1 minute, to serve as a glaze over the meat. I think it is safer to make a second batch of the marinade just for the glaze.
