Tex-Mex Cornbread Salad

- 2 pkg cornbread mix (prepared as instructed below)
- 1 cup onion, chopped
- 1 cup bell pepper, chopped
- 1 cup celery with leaves, chopped
- 4 boiled eggs, chopped
- 2 can Rotel, drained
- 1-1 1/2 cups mayonaise
- salt and pepper to taste
DIRECTIONS
- Mix and bake packaged cornbread mix as per instructions, only change is when you have it mixed add the onion, bell pepper, and celery to it before pour in pans.
- Cool cornbread and crumble into bowl.
- Add eggs, Rotel, mayo and salt and pepper.
- Stir well and serve.
