Tex-Mex Cornbread Salad

  • 2 pkg cornbread mix (prepared as instructed below)
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • 1 cup celery with leaves, chopped
  • 4 boiled eggs, chopped
  • 2 can Rotel, drained
  • 1-1 1/2 cups mayonaise
  • salt and pepper to taste
DIRECTIONS
  1. Mix and bake packaged cornbread mix as per instructions, only change is when you have it mixed add the onion, bell pepper, and celery to it before pour in pans.
  2. Cool cornbread and crumble into bowl.
  3. Add eggs, Rotel, mayo and salt and pepper.
  4. Stir well and serve.

This is an old recipe from my Aunt.
