Texas Caviar
INGREDIENTS
  • 3 cups cooked black-eyed peas, drained and cooled
  • 2 cups of whole kernel corn, drained
  • 1 cup (one can) black beans, drained
  • 1/2 cup diced yellow onion
  • 1 cup diced red onion
  • 1 green or red bell pepper, diced
  • 1 tablespoon minced garlic
  • 1-2 small green jalapenos, minced
  • 1 heaping tablespoon Cajun seasoning (like Tony Chacery's)
  • 1/3 cup olive oil
  • 1/3 cup red wine vinegar
  • 1 teaspoon black pepper
DIRECTIONS
  1. Mix all ingredients above in a large bowl. Chill in the refrigerator for 24 hours or over night. Stirring again before serving
