INGREDIENTS
  • 1 c. canola oil or olive oil
  • 1/2 or 3/4 c. sugar
  • 1/2 c. cider vinegar
  • Bring to a boil, stir a couple of times. Set aside to cool.
  • Chop 1 c. celery
  • Chop 1 Sm onion
  • jalapeno (to taste from jar)
  • Drain & rinse
  • Small or med jar pimentos (you won't miss them if you don't have them)
  • Can of black eyed peas
  • Can of black beans
  • Small can shoe peg corn
  • Mix together & let set overnight.
  • Drain before serving.

RECIPE BACKSTORY
My aunt made this for Christmas last year and I almost turned my nose up at it because I do NOT like beans, but I decided to be adventurous and I'm glad I did. I love it! You would never know that it was beans! I have to watch my carbs, so I substitute about a 1/2 cup of Splenda for the sugar. No one will ever know the difference.
