INGREDIENTS
- 1/2 REd Onion
- 1 Green Bell Pepper
- 1 Bunch Green Onions
- 2 Chopped JalapeƱos
- 1 Tbsp. Minced Garlic
- 1 Pint Cherry Tomatoes, Quartered
- 1 (15oz) can of Black Beans Drained
- 1 (15oz) can of Black Eyed Peas Drained
- 1/2 tsp. Coriander
- 2 Cups of Frozen Sweet Corn
- 1 Bunch Chopped Fresh Cilantro
- 4 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 2 teaspoons kosher salt
- Juice of 1 lime
DIRECTIONS
- In a large bowl, mix all ingredients (except cilantro) together.
- Cover and chill in the refrigerator approximately 2 hours.
- Toss with desired amount of fresh cilantro to serve.
