Texas Cornbread Salad

  • 2 pkg cornbread mix
  • 6 slices bacon, cooked crisp and crumbled
  • 1 large onion, chopped fine
  • 1 large bell pepper, chopped fine
  • 2 hard boiled eggs, chopped
  • 2 cans rotel, drained
  • 1 1/2 cup mayo
  • salt and pepper
DIRECTIONS
  1. Mix cornbread as directed and add bacon, onion, pepper and eggs. Bake as directed. Cool and crumble. Add remaining ingredients and stir.
