Texas Pecan Cake

INGREDIENTS
  • 2 cups butter
  • 2 cups sugar
  • 6 eggs
  • 1 Tbsp lemon extract
  • 4 cups flour
  • 1 ½ tsp baking powder
  • 2 cups white raisins
  • 4 cups pecan halves
DIRECTIONS
  1. Cream butter and sugar together.
  2. Then add eggs (1 egg at a time) and lemon extract.
  3. In a separate bowl mix raisins and pecans together.
  4. Sift flour and baking powder together in another bowl.
  5. Then dump dry ingredients on top of the raisins and pecans.
  6. Mix all ingredients together.
  7. Bake 275 degrees for 2 hours for a large cake or for 2 loaf cakes bake at 275 degrees for about 1 hours and 35 mins.
  8. Check for doneness with a toothpick.
