Texas Style-Southern Burnt Cream Pie
INGREDIENTS
- Cooking Time: 15 to 20
- 1 cup sugar, divided
- 1/2 cup boiling water
- 1/4 cup all purpose flour
- 1/8 teaspoon salt
- 1 1/2 cups milk
- 2 egg yolks (beaten), save whites for meringue
- 1 1/2 tblspn margarine
- 1 teaspoon vanilla extract
- 1 (9 inch) BAKED pie shell
- Meringue:
- 2- egg whites
- 1/8 tsp. salt
- 4 tblsp. sugar
DIRECTIONS
- Place 1/2 cup sugar in a skillet and dissolve over medium heat until sugar turns a light brown.
- Stir in boiling water and boil for 2 minutes.
- Blend together remaining sugar, flour, and salt.
- Add milk to flour-sugar mixture and mix till smooth.
- Stir in the burnt sugar syrup.
- Cook and stir over low heat or over hot water.
- When the mixture is hot, pout part of it over the beaten egg yolks.
- Then add yolks to hot mixture.
- Stir until mixture coats a spoon. Add margarine and vanilla.
- Cool filing completely.
- After total cool pour into pie shell.
- Beat together egg whites and salt until stiff, but not dry.
- Gradually beat in sugar.
- Pile meringue all on top pie and bake @ 300 for 15 to 20 minutes.
