Thai Basil Chicken

  • 2 T minced garlic
  • 1 T olive oil
  • 1 cup fresh basil leaves, chopped
  • 4 boned and skinned chicken breasts
  • 3 T water
  • 3 T lemon juice
  • 1 T soy sauce
  • 1 T sugar
  • 1/2 tsp pepper
DIRECTIONS
  1. Brown chicken breasts in olive oil.
  2. Add other ingredients.
  3. Cover and simmer 5 or 6 minutes; spoon juices over chicken often.
