Thai Chicken Skewers
INGREDIENTS
  • Cooking Time: 8-10
  • 1/4 cup smooth peanut butter
  • 2 Tablespoons onion -- finely chopped
  • 2 Tablespoons parsley -- finely chopped
  • 2 Tablespoons fresn squeezed lemon juice
  • 1 1/2 teaspoons soy sauce
  • 1 clove garlic -- finely chopped
  • 1 teaspoon hot sauce
  • 1/2 teaspoon ground coriander
  • 1 pound boneless skinless chicken breast -- cut into 1" pieces
  • wooden skewers - soak in water for several hours
DIRECTIONS
  1. Combine all ingredients except for chicken (and skewers) in a medium bowl.
  2. Add chicken and toss to coat.
  3. Cover and refrigerate 6-8 hours or overnight.
  4. Preheat broiler or grill. Thread chicken onto skewers.
  5. Broil or grill for 8-10 minutes, turning frequently. Do not overcook.
