Thai Ginger Chicken

INGREDIENTS
- 3 tablespoons cooking oil
- 1 tablespoon minced garlic
- 1 cup of chicken breast, cubed
- 1 cup sliced buttom mushrooms
- 1 cup pea pod
- 1 cup chopped red onion
- 1/2 cup matchstick carrots
- 1 can baby corn, drained
- 3 tablespoons minced fresh ginger
- 2 tablespoons fish sauce
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- Pinch of sugar
- 3 tablespoons chopped onion
- 3 tablespoons green onion in 1" pieces
- optional - sliced fresh jalepenos
- garnish - sliced green onion and cilantro
DIRECTIONS
- Stir fry chicken, garlic and onions in cooking oil.
- Add sauces, sugar and ginger
- Add remaining ingredients
- Serve and garnish over steamed rice
