The Best Banana Bread

  • 1 cup sugar
  • 1/2 cup butter (real butter - it matters!)
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup banana, mashed
  • 1 1/2 cup flour
  • 1/2 tsp soda
  • 1/2 cup chopped nuts (Walnuts are best)
  • 1/2 cup sour cream (in case you are wondering, this it the magic ingredient that makes banana bread so moist!)
  1. Cream sugar and butter, add eggs one at a time, mix well after each addition. Add vanilla and stir in bananas. Mix well. Combine flour, salt, and soda and blend into banana mixture 1/2 cup at a time. Stir in nuts. Gently fold in sour cream. Pour mixture into 9x5x3 greased pan and bake at 350 degrees F for 1 hour. Cool in pan 20 minutes. Turn out on rack to cool further.

How often do you buy bananas and they turn brown and spotty? Personally, I prefer my bananas almost yellow (maybe a hint of green on the stem). Once they start turning brown, the sugar changes and they get mushy and too sweet for my taste. I don't like wasting food either…let them get browner and use them for baking! If you don't use them right away, here's a hint, peel them and put about 3 or so into a ziplock and freeze. Defrost them when you want to bake.
