The Essential Peanut Butter Cookie

  • 1 cup vegetable shortening
  • 1 cup granulated sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup crunchy peanut butter
  • 3 cups flour
DIRECTIONS
  1. Preheat the oven to 350 F
  2. Lightly grease (or line with parchment) two baking sheets
  3. In a medium-sized bowl, cream together the shortening, both of the sugars, eggs, vanilla, baking soda, salt, and peanut butter.
  4. Add the flour
  5. Stir to combine
  6. Drop the dough by the tablespoonful onto the prepared baking sheets
  7. Press down each cookie with a fork to make a criss-cross design.
  8. Bake the cookies for 10 minutes or until they are lightly browned
  9. Remove the cookies from the oven
  10. Transfer to a wire rack to cool
