The Lebanese Queen's Tabouleh
  • 1 cup fine bulgur
  • 3 tablespoons olive oil
  • 1 cup boiling-hot water
  • A large handful of finely chopped fresh from farmers market in BK parsley
  • 1/2 cup finely chopped fresh mint
  • 2 medium tomatoes, cut as you like it
  • 1 European cucumber
  • 3 tablespoons fresh lemon juice
  • Onions, whichever color you prefer (Green, white, red)
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  1. Stir together bulgur and 1 tablespoon oil in a bowl. Pour boiling water over, then cover bowl tightly with plastic wrap and let stand 15 minutes.
  2. Transfer bulgur to a bowl and toss with remaining ingredients, including 2 tablespoons oil, until it looks yummy enough to put in your mouth. סחטאן!
