  • 1 stick of margarine,
  • 1/2 cup sugar,
  • 3 eggs,
  • 3 Tbs white vinegar,
  • 1 tsp vanilla,
  • 1 cup shredded coconut.
  1. blend sugar and butter, add eggs one at a time until mixture is creamy and fluffy. Stir in vinegar, vanilla and coconut. Pour into unbaked pie shell. Bake at 325 for 45 minutes.
This was another favorite of our family and to this day I cant find a coconut pie that measures up to my Mothers
