Three Cheese Lasagna with Veggies
INGREDIENTS
  • 1 large onion chopped
  • 4 garlic cloves minced
  • dash of olive oil
  • 1 zucchini chopped finely
  • 2 cups mushrooms sliced
  • 1 large green bell pepper chopped
  • 4 cups marinara sauce *see recipe
  • 4 TBSP fresh basil chopped finely
  • 1 teaspoon fresh oregano chopped
  • dash of salt and pepper
  • 2 cups ricotta cheese
  • 6 oz. fresh spinach chopped
  • 2 eggs
  • 2 handfuls of chopped parsley
  • 1 cup parmesan cheese
  • 16 oz. lasagna noodles cooked
  • 2 cups shredded mozzarella
  • Foil
DIRECTIONS
  1. Preheat oven at 375 degrees.
  2. Oil 13 X 9 inches baking dish.
  3. In large pan saute onions and garlic in oil.
  4. Add zucchini, mushrooms and bell pepper to pan and cook 5 more minutes.
  5. Add marinara sauce, basil, oregano, salt and pepper and cook 15 more minutes.
  6. In a large bowl add ricotta cheese, spinach, eggs, 1/2 bunch parsley and 1/2 cup parmesan cheese and mix.
  7. Put around 1 cup marinara sauce to cover the bottom of baking dish.
  8. Add noodles to cover baking dish.
  9. Spread some ricotta mix.
  10. Spread around 1/2 to 1 cup marinara sauce.
  11. Repeat the layers.
  12. Top the last layer with marinara sauce and mozzarella.
  13. Put foil to cover very loosely as not to touch the lasagna.
  14. Bake for 30 minutes then take off foil and cook an additional 15 minutes or until done.
  15. Garnish with rest of parsley and Parmesan.
