Three Color Salad
INGREDIENTS
  • 2 hearts romaine lettuce
  • 1 medium head radicchio
  • 1 medium bulb endive
  • Vinagarette:
  • 1/3 cup extra virgin olive oil
  • 1 small shallot, minced
  • 3 tbl balsamic vinegar
  • Salt & Pepper
DIRECTIONS
  1. Combine greens in salad bowl.
  2. Microwave olive oil & shallots for 30 seconds.
  3. Let stand 5 minutes.
  4. Pour oil & shallots in bowl and whisk in balsamic vinegar.
  5. Drizzle over salad & toss.
  6. Season w. salt & pepper to taste.
