Three Grain Muffin Mix

INGREDIENTS
  • 4 1/2 cups Flour
  • 3 cups Bran BudsĀ® -- or other All-Bran cereal
  • 2 cups Rolled Oats
  • 1 cup Millet
  • 1 1/2 cups Brown Sugar, packed
  • 4 1/2 teaspoons Baking Soda
  • 2 tablespoons Cinnamon
  • 1 1/2 cups Raisins -- chopped or whole
  • To make muffins:
  • 3/4 cup Vegetable Oil
  • 1 Egg
  • 4 Egg Whites
  • 3 3/4 cups Buttermilk
DIRECTIONS
  1. Mix first 8 ingredients well. Store in air tight container in a cool, dry place.
  2. To make muffins:
  3. Combine wet ingredients (last 4 ingredients) . Combine dry mix with wet ingredients in a
  4. large bowl. Stir only until blended. Spray muffin pans with a non-stick cooking spray.
  5. Spoon batter into muffin cups until 2/3 full. Bake in preheated, 400 degree F. oven, until
  6. firm to the touch, 18-20 minutes. Cool slightly, invert pans and remove muffins.
  7. For a smaller batch: Combine 4 1/2 cups of the stirred muffin mix with 1/4 cup vegetable
  8. oil, 1 egg plus 1 egg white, and 1 1/4 cups buttermilk
