Three Month Cucumber Salad

INGREDIENTS
- 9 cups (9 medium) sliced 1/8-inch cucumbers
- 1 cup (1 medium) chopped onion
- 1 cup (1 medium) chopped red or green pepper
- 1 cup (2 stalks) chopped celery
- 1 1/2 tablespoons salt
- 2 cups sugar
- 1 cup cider vinegar
- 1 teaspoon celery seed
- 1 teaspoon mustard seed
DIRECTIONS
- In a large bowl combine first 5 ingredients for salad; mix well. Let stand at room temperature for 30 minutes; do not drain.
- In a small bowl combine last 4 ingredients for dressing; pour over salad. Stir until throughly mixed. Refrigerate overnight before serving.
- Store refrigerated. This lasts for three months.
