Three Month Cucumber Salad

INGREDIENTS
  • 9 cups (9 medium) sliced 1/8-inch cucumbers
  • 1 cup (1 medium) chopped onion
  • 1 cup (1 medium) chopped red or green pepper
  • 1 cup (2 stalks) chopped celery
  • 1 1/2 tablespoons salt
  • 2 cups sugar
  • 1 cup cider vinegar
  • 1 teaspoon celery seed
  • 1 teaspoon mustard seed
DIRECTIONS
  1. In a large bowl combine first 5 ingredients for salad; mix well. Let stand at room temperature for 30 minutes; do not drain.
  2. In a small bowl combine last 4 ingredients for dressing; pour over salad. Stir until throughly mixed. Refrigerate overnight before serving.
  3. Store refrigerated. This lasts for three months.
