Tiramisu Cake

  • GGFG Yellow Cake Mix or cake mix of choice.
  • 2 small boxes of instant vanilla pudding mix
  • 2 c. cold milk
  • 1 c. espresso coffee
  • 2 c. heavy cream
  • 1/4 c. sugar
  • 1 t. vanilla
  • Chocolate shavings or chocolate covered espresso beans for garnish
DIRECTIONS
  1. Bake GGFG Yellow Cake according to package directions in a 9"X13" baking pan lined with parchment paper. Cool cake for 10 minutes. Meanwhile in a large bowl combine pudding mixes, cold milk, and espresso. Beat on low speed with mixer until thickens. Using a wooden dowel, poke holes evenly over entire top of cake, then pour pudding mixture evenly over entire top of cake, place cake in fridge. Whip heavy cream starting on low speed of mixer, as it begins to thicken, add sugar slowly. Turn to high speed, add vanilla, and beat until stiff peaks form. Spread whipped cream over top of cake and garnish with chocolate shavings or espresso beans as desired. Refrigerate until serving.
RECIPE BACKSTORY
While I enjoy classic Tiramisu, it starts with making GF ladyfingers. Frankly, this cake is much easier, and I still get the flavors.
