Toffee Delight Muffins

INGREDIENTS
  • 2 cups flour
  • 1 cup sugar
  • 1 cup water
  • 4 eggs
  • 1 small package instant vanilla pudding
  • 1 small package instant butterscotch instant pudding
  • 2 t. baking powder
  • 1 t. salt
  • 3/4 cup vegetable oil
  • 1 t. vanilla
  • Topping:
  • 1 cup firmly packed brown sugar
  • 3/4 cup chopped pecans
  • 1 t. cinnamon
DIRECTIONS
  1. Mix together all except topping.
  2. Beat 2 minutes.
  3. Using 1/2 of batter, pour and fill each muffin cup 1/3 full.
  4. Mix together topping.
  5. Sprinkle 1/2 of topping on muffins.
  6. Add remaining batter to fill each muffin cup 2/3 full, then put rest of topping on.
  7. Bake 15 to 20 minutes at 350.
