Tomato, Corn & Avocado Salad

  • 2 tbsps fresh meyer lemon juice
  • 2 tbsps fresh juiced orange juice
  • 4 tsps extra vrigin olive oil
  • 2 cups fresh yellow corn
  • 2 medium tomatoes (coarsely chopped)
  • 2 avocados, peeled and diced
  • 1 green onion, finely chopped
  • salt
  • pepper
  • 2 tbsps fresh cilantro leaves (rough chopped)
DIRECTIONS
  1. In a small bowl, whisk together the lemon and orange juices and the olive oil.
  2. In a larger bowl, combine the corn, tomatoes, avocados, green onion and cilantro.
  3. Toss with the dressing and season with salt and pepper.
  4. Chill 1 hour.
