Tomato Avocado Salad
INGREDIENTS

  • 2 Cups Tomatoes (chopped)
  • 2 Ripe Avocados (cubed)
  • 1/4 Small Red Onion (Sliced)
  • 1/4 Cup Cilantro (minced)
  • Juice of one Lime
  • 2 Tbsp. EVOO (extra virgin olive oil)
  • Add On Options-
  • 1 Small Cucumber (cubed)
  • 1/2 Cup of Canned Chickpeas (drained)
  • 1/2 Cup of Black Beans (drained)
  • 1/2 Cup Crumbled Feta Cheese
  • 1/2 Cup of Fresh Mozzarella Pearls
DIRECTIONS
  1. In a large salad bowl place tomatoes, avocado and cilantro
  2. Drizzle with EVOO, lime juice, red pepper flakes, salt and pepper to taste.
  3. Gently toss and serve immediately
