Tomato Bacon Cups
  • Cooking Time: 8-10
  • 1 Small Tomato
  • 1/2 Cup Lowfat Mayonnaise
  • 1/2 Cup Bacon Bits
  • 1/2 Cup Swiss Cheese, shredded
  • 1 Small Onion, finely chopped
  • 1 Teaspoon Dried Basil
  • 12 Ounces Refrigerated Biscuits
  1. In a small bowl, combine the tomato, mayonnise, bacon, cheese, onion and basil; set aside.
  2. Split each biscuit into three layers; press each layer into an ungreased miniature muffin cup.
  3. Spoon tomato mixture into cups.
  4. Bake at 450 degrees for 8-10 minutes or until golden brown.
  5. Serve warm.
I think this is from a Taste of Home magazine. But while on vacation to Texas my sister fixed this. It was so good I had her send me the recipe.
