Tomato Mustard Chicken
  • 2 boneless skinless chicken breasts, cut into strips
  • 1 tablespoon Dijon mustard
  • 2 tablespoons chopped tomatoes
  • 1 tablespoon olive oil
  • salt & pepper to taste (optional)
  1. Heat 1 tablespoon olive oil in large nonstick skillet over medium heat. Sautée the chicken until cooked but still tender.
  2. Add 1 tablespoon Dijon mustard and 2 tablespoons chopped tomatoes and stir. For a thinner sauce, add a little water.
