Tomato Mustard Chicken

INGREDIENTS
- 2 boneless skinless chicken breasts, cut into strips
- 1 tablespoon Dijon mustard
- 2 tablespoons chopped tomatoes
- 1 tablespoon olive oil
- salt & pepper to taste (optional)
DIRECTIONS
- Heat 1 tablespoon olive oil in large nonstick skillet over medium heat. Sautée the chicken until cooked but still tender.
- Add 1 tablespoon Dijon mustard and 2 tablespoons chopped tomatoes and stir. For a thinner sauce, add a little water.
