Tomato Soup

  • 3-4 # ripe tomato's, rough chopped
  • 1 clove garlic, minced
  • 1 small white onion, diced
  • 2 t fresh basil
  • splash of white wine
  • 3 T butter or olive oil
  • salt/pepper to taste
  1. In a large stock pot over med. heat saute onion and garlic in butter. stirring so the garlic doesn't burn, 5 minutes. Add splash of wine and cook a couple minutes more. Add chopped tomato and cook over med/low until tomato's are soft, 20-30 minutes. add fresh basil and cook for 5 minutes more. Working in batches, either in a food processor or blender, blend mix being careful NOT to fill more than 1/2 way up and always cover with dish cloth as you blend. Put back in pot add salt/pepper to taste serve with a swirl of olive oil.
I like to make this on a cold winter day, enjoying it with a toasted piece of french bread.
