Tomatoes with Basil Vinaigrette Recipe
  • For the vinaigrette:
  • 2 tablespoons red wine vinegar
  • 1/3 cup extra virgin olive oil
  • 1 tablespoon chopped, fresh basil
  • salt to taste
  • freshly ground black pepper
  • For the salad:
  • 3 large ripe, sliced tomatoes, assorted varieties and colors
  • 4 slices red onion
  • basil leaves for garnish
  1. Place all the ingredients in a container with a tight-fitting lid.
  2. Shake well.
  3. Adjust the salt and pepper to taste.
  4. Arrange the tomato and onion slices on 4 serving plates.
  5. Sprinkle generously with the vinaigrette.
  6. Garnish with basil leaves and a few twists of pepper.
