Tortellini Soup

INGREDIENTS
  • 1 1/4 lb. Italian sausage
  • 1 tablespoon vegetable or olive oil
  • 2 cups zucchini
  • 1 cup cubed green pepper
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 4 tablespoons dried parsley, chopped
  • 1 32oz container of chicken stock
  • 1 or 2 cups of water (your taste)
  • 1 large can of chopped tomatoes
  • 1 16oz package of refrigerated tortellini
  • 1 small can of tomato sauce
  • Salt and pepper to taste
DIRECTIONS
  1. Brown sausage and drain well
  2. In large soup pan, cook zucchini, green pepper, onion, garlic, and oregano in oil until done
  3. Add cooked sausage, parsley, chicken broth, water, tomatoes, tomato sauce, salt, pepper, and tortellini.
  4. Bring to boil. Reduce heat and simmer 15 minutes.
