Tortellini with Chicken, Basil & Tomato
INGREDIENTS

  • ½ oz parsley, chopped
  • 1 (2 lb) bag of tortellini
  • 1 lb chicken breast, sliced
  • Olive oil
  • ¼ cup red onion, finely diced
  • ½ tsp garlic, chopped
  • 2 cups tomato, diced
  • ½ cup white wine
  • Basil pesto, to taste
  • ¼ cup Parmesan cheese
  • 2 tbsp parsley, chopped
  • Salt and pepper, to taste
DIRECTIONS
  1. Cook tortellini according to directions.
  2. In a warm sauté pan, brown off chicken in olive oil.
  3. When brown, add onions & garlic.
  4. Cook about 2 minutes.
  5. Add tomatoes, white wine & basil pesto.
  6. Once mixture starts to boil, add cooked tortellini.
  7. Reduce flame.
  8. Add Parmesan & parsley.
  9. Salt & pepper to taste.
