Traditional Pi'kwun Salmon
INGREDIENTS

- 1 Whole Sockeye Salmon
DIRECTIONS
- Harvest 1 (3” thick x 5' long) Iron Wood pole for the main stick and split it down the centre
- Harvest 4 (1/2” thick x 12” long) Iron Wood sticks for spreading the salmon
- Debone the Salmon but leave the fish whole (this is the tricky part)
- Slide the spreader sticks through the salmon horizontally, ensure that one stick is placed under the salmon's collar bone.
- Slide the Salmon with the spreader sticks into the split main stick.
- Place main stick in the ground and lean salmon over a fire to cook for approximately 3060 minutes. Serve and Enjoy!
