Trish's Breakfast Casserole

- (1 Pound Pork Sausage
- 1 Onion, Chopped
- 1 8 Ounce Package Bread Croutons
- 1 4 Ounce Can Mushrooms, Drained
- 2 Cups Cheddar Cheese, Grated
- 10 Eggs
- 2 Cups Milk
- Salt
- Freshly Ground Black Pepper
- 1½ tsp Dry Mustard
DIRECTIONS
- Cook the pork sausage and onion in a skillet. Drain. Set aside.
- Spray a 9x13 baking dish with vegetable cooking spray.
- Place the croutons in the bottom of the baking dish evenly.
- Place the mushrooms on top of the bread cubes.
- Place the reserved sausage mixture on top of the mushroom layer.
- Sprinkle the cheese over the sausage.
- In a large bowl, combine the eggs, milk, salt, pepper and mustard together.
- Pour the mixture in the baking dish, cover and refrigerate overnight.
- Bake at 325 degrees for 30-35 minutes or until the top is golden brown.
- Makes 8-10 servings.
