Tuna-Rice-Olive-Pumpkin Pie

  • 500g pumpkin
  • 2 large tuna cans
  • 2 onions
  • 75g anchovy (optional - I omit this as it might get too fishy)
  • 250g green/black olives
  • chopped mint leaves
  • 1 cup cooked rice
  • some olive oil
  • salt and pepper
DIRECTIONS
  1. Prepare my Mami' Dough - see my Family cookbook for the recipe :)

  3. FILLING INSTRUCTIONS
  4. Heat the olive oil and fry the onions for a while.
  5. Add the diced pumkin, reduce heat and cook for 10 minutes while stirring.
  6. Combine the rest of the ingredients: tuna, anchovy (if using), olives, mint leaves, cooked rice, salt and pepper.
  7. Cook for another 5 minutes and finally remove from heat and let cool completely (if possible)

  9. Prepare the Mami' Dough in a baking tray and fill it with the Pumpkin-Tuna-Rice mixture.
  10. Bake for 45minutes - 160 degrees Celcius
RECIPE BACKSTORY
I think the is actually from zijja Tessie - translates to aunt Tessie or better 'Aunty Tessie' in Malenglish .. MalteseEnglish! Tastes awesome in summer (eaten at room temperature or even cold when it's 40 degrees +) but also in winter (definitely warm)
