Turkey Breast & Sweet Potatoes
  • Bone in turkey breast, 5-6 lbs., thawed
  • 2-3 sweet potatoes, peeled
  • 1 cup pearl onions
  • 1/2 cup chicken broth
  • 1/4 cup orange marmelade
  • 2 cloves of garlic, crushed
  • 1/2 teaspoon dried marjoram
  • 1/2 teaspoon salt
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons corn starch
  • 2 tablespoons water
  1. Take skin off turkey breast and clean and place turkey breast in 5-6 quart slow cooker; Cut peeled sweet potatoes into 1 inch cubes and arrange with onions around turkey breast in slow cooker.
  2. Mix remaining ingredients, except for corn starch and water, in a small bowl and pour over turkey in slow cooker.
  3. Cook on low for 7-8 hours.
  4. Strain liquid once the turkey and vegetables have been removed from slow cooker and put liquid in microwave safe bowl; Mix cornstarch with water until smooth and add to liquid; microwave for about 30-40 seconds to thicken and use for gravey.
