Turkey Burritos
  • 1 1/2lb. ground turkey
  • 1 onion, chopped
  • 1 sweet green pepper, chopped
  • 1 35g packet of taco seasoning
  • 6 large flour tortillas
  • 1 14oz. can refried beans
  • 3 cups shredded monterey jack cheese, divided
  • 1 cup light sour cream
  • 1/2 c. salsa
  • 2 cups shredded lettuce
  • 1 tomato, chopped
  • 1/3 cup black olives, sliced
  1. Preheat oven to 175. Cook turkey, onion and green pepper in skillet. Stir in taco seasoning mix and water; bring to a boil and simmer for 5 minutes or until liquid is reduced. Spread refried beans over each tortilla and top with turkey mixture and cheese. Roll each tortilla and place in a greased baking dish. Top with cheese. Bake for 30 minutes. Top with salsa, lettuce, tomato, black olives and sour cream.
