Turkey Meatloaf In Progress
  • Glaze:
  • 1/2 cup catsup
  • 1/4 tsp ground cumin
  • Worcestershire sauce
  • Hot pepper sauce
  • 1 T honey
  • 1 T brown sugar
  • Mix all ingredients in small saucepan. Set aside.
  • Meat loaf:
  • Preheat oven to 350 degrees.
  • 2 teaspoons olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 10 oz. mushrooms, chopped fine in food processor
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoons Worcestershire sauce
  • 3 T. ketchup
  1. Saute onion and garlic in oil in a skillet over medium heat until soft. Add mushrooms, salt, and pepper. Stir occasionally, cooking until liquid that the mushrooms give off has evaporated and they are tender (about 10 minutes).
  2. Stir in Worcestershire sauce and 3 T. ketchup, then set aside (off heat) to cool.
I am on a search for my "perfect" turkey meatloaf, and this comes close. I used a combination of 4 recipes (Alton Brown, Epicurious, Cook's Illustrated, and Chowhound user Will Owen's). Here's what I did:
