Turkey Sausage Stuffed Eggplant

- 1 lb Turkey Sausage
- 1 cup bread crumbs (seasoned)
- 1 Medium sized eggplant
- Fresh Basil leaves
- Salt and Pepper
- 1/2 cup Chopped Celery
- 1/4 cup Chopped Onions
- 1/2 cupChopped Red Peppers
- 2 cups Cooked and cooled Minute rice
DIRECTIONS
- Preheat oven 375
- Slice eggplant down the center and scoop out the center where the seeds are, set aside.
- In a large empty sausage content from skin into hot skillet with 1 Tbsp of olive oil. Brown Turkey.
- Add to large bowl with veggies, bread crumbs, cooked rice and spices.
- Brush inside of eggplant with olive oil. Stuff with meat mixture.
- Wrap in tin foil and bake for 35 minutes.
- Serve warm.
