Turkish Lamb Skewers with Grilled Figs and Mint Melon Rounds

  • 8oz Boneless Leg of lamb, cut 1/2 inch thick chunks
  • 4 Stainless steel or soaked bamboo skewers
  • 4 fresh figs, halved
  • 1 cup greek-style yogurt
  • 2 Tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 cup chopped fresh mint
  • 2 tablespoons chopped fresh basil
  • 3 garlic cloves, minced
  • 1 tsp sea salt
  • 1/2 tsp cayenne
  • 1 tsp ground coriander
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • Melon Rounds
  • 1/2 cantaloupe
  • 1/2 honeydew melon
  • 1/2 a small watermelon
  • 1 tablespoon white sugar
  • 1/4 c rice vinegar
  • 2 tbsp fresh mint, chopped mint
DIRECTIONS
  1. Thread lamb onto skewers with 1/2 a fig on each
  2. In a mixing bowl combine yogurt with other marinade ingredients. Allow to infuse for at least one hour and up to a day.
  3. Using half the marinade, coat the skewers and grill for 8-10min on med heat or until desired doneness.
  4. Accompany them with the remainder of the yogurt marinade and pitas for dipping
  5. For Mint Melon Round salad, use a melon baller to scoop out melon into a bowl. Toss with wet ingredients and serve!!
