Tuscan Cornbread
  • 1 cup Flour
  • 2/3 cup Cornmeal
  • 1/4 cup Sugar
  • 1/4 cup Oil -a flavored olive oil is best
  • 2 tsp. Baking Powder
  • 2 Eggs
  • 1 cup Milk (or 1/2 cup milk and 1/2 cup yogurt or sour cream)
  • 1/2 tsp. Salt
  1. Preheat oven to 400 degrees.
  2. Combine ingredients.
  3. Pour into a greased 9x9 or round cake pan.
  4. Bake for 20-25 minutes.
This is one of those old family hand-me-downs brougt back to life with the addition of a strongly flavored Tuscan Olive Oil. The corn flavor really brings out the subtle hues in the oil. I think that any oil would work here - so experiment and let me know what you discover.
